Tofu Scrambled Eggs

You really can’t go wrong with a good tofu scramble in my book. For this breakfast version of tofu scrambled eggs I took inspiration from a food of my past, scrambled eggs. But this is the healthy, cruelty free version! No cholesterol bombs here.

You can makes these tofu scrambled eggs with any assortment of veggies and it will come out great! I used mushrooms, bell pepper, onions, and spinach. You can also leave out the veggies if you want to create a simple “scrambled egg” as a breakfast side. But as usual, I couldn’t resist adding the green.

Tofu Scrambled Eggs

Turmeric adds the yellow color to the tofu scrambled eggs and additionally provides anti-inflammatory benefits combined with a bit of black pepper. Go ahead and play with the ratio of spices to find the perfect balance of flavor and kick.

These tofu scrambled eggs are delicious served with salsa and hot sauce for those of us who like heat. They are also extremely tasty in a breakfast burrito. Or, how about breakfast for dinner? Just saying… Anyway, enjoy!

Simple scrambled tofu "eggs", flavored with turmeric and paprika make a great breakfast option!

Ingredients
  • 1 block extra firm tofu, crumbled
  • 2 cups mushrooms, chopped
  • 2 cups spinach, raw
  • 1/2 bell pepper, chopped
  • 1/2 onion, chopped
  • 3 scallions, diced
  • 1 1/2 Tbls nutritional yeast
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/8 tsp black pepper
  • 1/8 tsp salt
  • 1 tsp liquid aminos
  • 2 Tbls water
Instructions
  1. In a small bowl, combine all of the spices with 1/2 tsp liquid aminos and 2 Tbls water. Stir to combine.

  2. Place the onion and peppers in a pan with a little bit of water or olive oil and cook until softened. Add add the mushrooms and scallions. When the vegetables are soft, add the spinach. 

  3. Crumble the tofu into very small pieces and place in the pan with the vegetables. Add additional 1/2 tsp liquid aminos to the stir fry.

  4. Pour the spice mixture into pan and stir with a spatula until the spices have even coated the tofu and vegetables. 

  5. Heat for a new more minutes until the tofu is warmed through. Add additional salt and pepper to taste. Serve with optional salsa and/or hot sauce.
