Pear Vanilla Crisp

The weather around here has been unseasonable cool and beautiful, with a definite feeling of fall in the air. I have used the changing season as an excuse to bake more yummy treats, such as this pear vanilla crisp. Because why not? After I realized that there were a few pears in the fridge that desperately needed using, I decided to substitute them for apples in a crisp. I adjusted the flavors slightly to complement the sweetness of the pears, and the result was delicious.

I’d never tried substituting pears into a crisp before, but as the sweet and spicy aroma began wafting from the oven I realized it was a good decision. I will definitely be making this pear and vanilla crisp again. And just a thought, but if you happen to have some vegan vanilla ice cream on hand I would highly suggest adding a scoop to your plate of pear vanilla crisp. It would be the perfect complement!

This recipe can easily be adapted to include other fruit in the filling or nuts in the crumble topping. I think a combination of peaches and pears would be delicious, or you could add some blueberries. Hope you enjoy this pear vanilla crisp and happy fall!

  • 4 pears
  • lemon, a few squeezes
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1 Tbsp corn starch, optional
Crumble Topping
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp sea salt
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut oil, melted
  • 2 Tbsp vegan butter, melted
  1. Preheat oven to 350°. 

  2. Chop the pears into small pieces. In a bowl, mix pears with ground ginger, cinnamon and a few squeezes of fresh lemon. If your pears seem very juicy, add the optional corn starch to absorb the excess liquid. 

  3. For the topping, add all dry ingredients in a mixing bowl. Mix to combine. Finally, add the coconut oil, vegan butter and vanilla extract and combine with the dry ingredients. 

  4. Place the pears in a baking dish and top with the crumble. Bake for approximately 30 minutes until the pears are soft and bubbling.
